True. A mentor told me long ago: "You can have control, or growth, but not both." Meaning, without a team, or leveraging your work, you'll have all the control, but if you wish to grow your industry, you must have a team, or a group to leverage your work.

😁I was stationed in Okinawa in 1958, learned to love Japanese food then and I crave it even more now that I am 90 years old. We are lucky enough to have several traditional Japanese restaurants close to my home which I visit often. Thanks for reminding to go tonight.😁

When he said he was Japanese but not fully, I didn't understand until history and his words explained his journey. Yes, he is not like any typical Japanese at all. What a beautiful way to capture his life in the study of food - like netflix's Chef's Table but shorter without sacrificing quality of storytelling.
