My niece is half-norwegian, so my Mum uses to bake lyssekatter, too. I'd never thought to combine gingerbread with cheese. I shall try that. Gingerbread here in Germany is soft, not crispy, and I guess, yours is knows as 'brune kaker' here in northern Germany. My aunt makes them in the Christmas time.
