When you cook a steak that big the internal temp can reach 135 with less color change. Wagyu also has a naturally deeper red color.

I'm not trying to assault you commentors...but you're wrong. Steak temps arent a color, they're a temperature. I was a server at one of 2 4 star 4 diamond steakhouses in the country at one point. Chains and local restaurants severely skewed what the average person thought steak temps looked like. Medrare looks significantly more rare than what they have led you to believe. If you dont believe me, use a thermometer at home and see for yourself.

@@rexlint2520 I eat my steaks medium rare and even that was to undercooked for me. I bet it was still cold on the inside. I like a warm red center. You have to cook it on the low fire side for 7mins on each side. Then flame kiss it for 1 to 2 mins on each side then pull it off. It’ll be red or pink on the inside but it’ll be cooked and it’ll be hot all the way through. That was just disgusting in my opinion. That shyt was still raw and jelly like on the inside. That is not a properly cooked rare steak. He might as well just eaten it out of the pack. Steak is my specialty, I have a family of 10, and when we get together and do steak night at my parents house I grill 10 steaks and my family are addicted to my steaks.
