Confectionary flour is extra fine flour. If you have a high-powered blender, you can put regular rice flour in it and blend it to super fine, like powdered/confectionary sugar.

I make rice bread all the time with soaked rice in a blender. You can increase the amount of yeast and sugar a bit and lower the amount of liquid so the batter is thick and pours very slowly. It is difficult to get rice bread to not collapse when the batter is that thin. A recipe like this works pretty well for a pizza shell though.

There are two types of rice flour made for bread. The first type of rice flour contains high amylose and the other type which is amylopectin. Rice flour which contains high amylose (low amylopectin) such as basmathi or any long-grain type of rice will have the closest taste to a 'normal bread'. On the other side, rice flour with high amylopectin (low amylose) like glutinous or short-grain type will have a chewy and moist texture.

Commonly "confectionary" marked as glutenious rice flour (there no gluten, it contain more stretch and stikier) it usually used in motchi and other deserts

I don't know the answer but I tried this recipe with glutinous rice flour and it turned out verrrry sticky (like a sticky rice cake) so I don't think its the same thing..

@@ИннаСеменова-э1ш this is not the answer. They would call it as such in Japanese if that was the case. But I never seen the flour name as that one that is listed. As another person posted on another comment, the kind of rice flour best for bread is the kind milled from long grain rice, so less “sticky” type.

Xanthan gum used to make dough stickier, in this case type of flour allows to go without gum. Just make sure you are using right flour

To make rice bread, first, soak the rice overnight and blend it in a blender the next day. Keep in mind that rice flour doesn't rise like regular flour, so you'll need about 1 kg of long-grain for a standard-sized loaf. The taste is pleasant and similar to that of traditional bread.

I made this recipe I carefully weighed all ingredients as given. Your video shows after adding the water the mix was somewhat thick. Was there a time lapse where you added additional water because it thinned out to a runny consistency without reflecting this in the video.. I ask because I needed almost double the amount of water?

Make sure your yest haven't expired, use warm water-around 40°C, but don't go to high, yest is living organism and you will boil it if go higher then 50, add a little bit more sugar (it is a food for yest, it consume sugar and relise some gas, which make bubbles and rise you dough) also, while you are waiting for dough to rise put it in warm place (pre hited oven or any kitchen devise) it also should maintein temperature around 35-40°C

Most gluten free breads need to be stored in the freezer. I slice mine and then freeze it so I can take one or two pieces out at a time, for toast.
