As there are a few day to the last Tuesday of the carnival, we have a crunchy and delicate angel wings recipe for you. After numerous attempts, we have developed a recipe which delighted not only gluten-free vegan people. Not only the dough matters in the recipe - so does the frying.
The palm-oil-free Qualito SUN vegan frying fat is also very significant here.

Time: 40 minutes + the time in the fridge
Amount: 20 - 30 cookies
Ingredients:
150 g potato flour
100 g chickpea flour
3 tablespoons powdered sugar
1 1/2 glass ground flaxseed
1/2 teaspoon baking soda
Pinch of salt
100 ml coconut milk
100 ml sunflower oil
1 tablespoon apple cider vinegar
1 teaspoon vanilla extract
Powdered sugar for sprinkling
Vegan frying fat Qualito SUN
Instructions:
Mix the dry ingredients together and sieve them as chickpea and potato flours tend to form lumps.
Add coconut milk and oil to the dry ingredients and knead the dough. Near the end, add apple cider vinegar and vanilla extract.
Wrap the raw dough in plastic wrap and put it into the fridge for an hour
or two.
Warm the frying fat up in a sauce pan and take the dough of the fridge.
Knead it again and check if it doesn't need a little flour or coconut milk to become perfectly elastic.
Tear pieces of the dough off and roll them out on a silicone mat so that it's 3-4 mm thick.
Cut out narrow strips with pointy ends.
Make a longitudinal cut in each of the strips and put one end through it gently.
Put the raw angel wings into the hot frying fat and fry them for a moment, until they brown on both sides.
Sprinkle the ready angel wings with powdered sugar.
