Waddup, fam! Here we are after a long trip, we are finally doing our pop-up in Kansas City. In this video I show you the behind the scenes of getting everything ready, as well as the over night shift that I did with ‪@ChudsBbq‬. Cooking this much food in the cold is no joke, but it's made possible when you got the right people around you.

Thanks everyone for watching the video! I've had a lot of questions about what's in the glaze. It's sugar, ACV, and bourbon. What's the ratio? Not exactly sure. We didn't really measure it, but a lot of sugar, a lot ACV, and some bourbon. All mixed together and warmed up to give it a caramel-y and slight vanilla-y flavor.

Do you warm up the ACV and bourbon to melt the sugar, or was that not necessary? I'm also curious which bourbon you used, because profiles can be so different.

That was an awesome day, and a brutal night to be sure. You guys had the hardest shift, and I was glad to be there for a small part of it - I'll never forgive myself for leaving at 12:30am 😂. This is a great recap video of a great event - thanks for making awesome food, content, and being a helluvu person.

Awesome video Joe! Love the behind the scenes look at these things, and a what a great ending message. I love that this video highlights the comradery of BBQ, it’s one of my favorite things about BBQ. Oerhaps more than any other form of American cooking it emphasizes bringing people together.

Joe, the guy about 22 minutes in talking about how much of an impact you have on people's lives is absolutely right! I started making backyard bbq over 20 years ago, but everyone says that my bbq has reached another level in the last few years. Your (and Brad's) videos helped so much, along with going to Texas and eating the food, and talking to pitmasters (including spending the day with Evan LeRoy, which was awesome)! Not only are you impacting the cooks, you're also impacting the family, friends, and neighbors that we all cook for. Thanks and keep up the great work!

Having you and Brad who have done so many reps of trimming and cooking really looks like the lifesaver of the event. Great job! I agree with the other folks, put out a call way before hand and I bet you get some subscribers you could vet that would help. I'm sure that could be risky or awkward but hey that's how some great relationships start

I know there's not much you can do about the wind noise, but it's kind of rough. There is a premiere plugin for nvidia's noise cancellation software that was designed to noise cancel in real time for computer calls, streaming, etc. Still fun to see behind the scenes.

We didn’t really measure it to be honest. But just make simple syrup, add vinegar to balance it out. And as much bourbon as you would like to get a richer flavor

There’s really no recipe for it. We did it by taste, but start by making a simple syrup, add vinegar for acidity and then bourbon to a richer glaze

Joe and Brad (Chuds) are the two main sources that I ALWAYS reference when cooking bbq. They are the most humble pitmasters that you will ever see. Great job!!! No science is needed, just experience, good ole hard work, passion, and beer!

@@knoxavebbq Idk how long I been watching your videos, at least 2 yrs. First one was a night shift at TBlacks filmed 4yrs ago. Then a interview you did with Quetorials. At this point in my bbq-education the Mad Scientist was my go to and I had binged through his content. Then I saw that interview with Q, and it was on! Binged all your content..watch videos all week. Burn sticks on my next day off. Jeremy is great, brad is great, but your vibes/persona come through and inspire me. Jeremy has a quality production, could be Erica behind the camera. Brad has stand up comedy with great food. And I live in South Texas so he gets a instant thumbs up. Your vids feel like talking with the neighbor who happens to have a 4K camera and 1000gal smoker. Sincerely, you got great content. 👍🏻👍🏻
