I have had ice cream flavored with pork bones and cured pork meat. No chunks just infused in hot cream and strained out. That might have been a way to go in order to not have to make the caramel flavor in there.

I feel like this is the best episode of anything Bon Appetit has done in a long time. Sohla’s utter brilliance coming up with something so unique and interesting, Carla’s tremendous refinement of a traditional classic, Chris’ fantastic pallet bringing carbonara into the present day, the humour, the breakdown of each component to deeply understand the dish, all of it, just a treat to watch.

I have to say whoever hires staff at BA really knows what they’re doing. Everyone has such a distinct personality, there’s something for everyone to enjoy and a chef for everyone to relate to/love. John Smith if u lived in like Kansas or Nebraska 50k would totally be a livable salary. But Bon Appetit was located in the World Trade Center, in downtown manhattan. Living expenses are ridiculous in NYC, in any neighborhood, and the fact that Sohla has 15 years of professional experience and has worked for numerous accredited restaurants means that a salary of 50k is almost laughable. 50k couldn’t cover rent for a studio in Manhattan with other expenses, would make buying lunch or coffee in the overpriced shops nearby hard. It’s might be acceptable for a entry level position in another city, but Manhattan? A professional and inventive chef with 15 years experience? It’s disgusting.

td866 I debated even responding to this but,, lots of people are jobless before getting a job. That’s the point. They get a job. 1) people don’t need to be grateful to their sexist racist bosses for deigning you pay them less than they’re worth. 2) not working while you’re looking for a new position doesnt strip you of anything, least of all your autonomy at a new job. 3) Sohla had and audience and was employed before taking this, at Serious Eats, where she also shot cooking videos.

Chris is actually in the toughest position here - basic people will love the traditional. Sohla gets to really show off and play around with experimental. Somehow Chris has to thread the needle. He can't get too inspired, but he can't have it look too normal.

It is so distressing to watch this video knowing they only pay Sohla 50k per year. It is *obvious* she deserves much more, especially watching Chris ruin her guanciale when she had a good thing going. She is brilliant. She is a delight to watch on camera. Since it seems like you’re stupid, 4,000 multiplied by 12 is 48,000 dollars. I multiplied by 12 because that’s the number of months in a year. Are you catching up yet? 50,000-48,000=2,000. What exactly do you do with 2,000? I’ve not even accounted for taxes. You racist, ignorant people just want something to complain about because you live cushy, privileged lives.
