We buy amazing sourdough bread in San Francisco, break it into larger chucks and let it dry naturally for days. Then we soak and squeeze the bread. Amazing!

Just tried this last night and, sadly, did not enjoy. I think I've discovered that I don't like super tender meatballs. I want a nice crust and a bit drier. Followed everything exactly and they came out about the same, but not for me. I did enjoy making the process, though, so there's that. lol

can you still add sausage to this or would it be too wet? Maybe eggs/sausage is an either / or since they both add to the moisture factor. I'm a staunch sausage stuffing fan. ...but will have to try your eggy one , looks fab! :) Looks like it will double as a lovely strata the day after, with some fried eggs nestled in . And this is the perfect make ahead dish, since it seems you could bake covered for the first 30 min, store in the fridge overnight and do the final 30 min uncovered bake the big day, so as not to congest my one oven wonder of a kitchen!

They should have given you a Chambourcin or a red blend for Maryland instead of the Albariño. Linganore Winery does an amazing predominantly Chambourcin red blend called Bacioni which is one of my favorites. Or they should have had you try the Medieval Mead, which is the official mead of the Maryland Renaissance Festival.
