I like the sound of the 1st one but Id have used half that jar of horseradish. The others seem to be trying to make liverwurst palatable for people who don't like it. I was brought up using mustard on liverwurst. They used to sell a "spread" that was a creamier liverwurst with relish mixed in. I make a spread not a dip using yellow and spicy mustard or whole grain mustard, (walmart has a southwest spicy mustard I may try)a LOT of horseradish, onion and dill relish. I'm with you. When I want my liverwurst, I like the simpler styles that are more of a spread. But, I wanted to show a variety so it would appeal to a larger pool of guests if I put it out on a buffet.
