The citrus and fennel salad is just like one I used to get at B.Good. Except theirs would add avocado, goat cheese and a mint/citrus vinaigrette, plus some leafy bitter greens to the salad. And I would triple the amount of fennel and pistachios versus what you used, because I love those ingredients.

@Brian I started using the Non-stick spray on my BBQ before I turn it on. It allows me to get really good coverage on the grills without the potential of blowing my hand up. Once the BBQ starts coming up to temp the excess burns away leaving a very nice cooking surface. Over time the grill becomes less and less "sticky"

Loved this menu! Did it for 7/4 and everything was a hit. For the pasta salad, I’d double the broccolini (I love grilled veg) and make/use a little less vinaigrette (more than needed and tends to pool, which I find a little unplasant w leftovers). The citrus salad is inspired! Thanks, Bri!

I really enjoyed this video, and in particular that it was free from the scourge of unpleasant chewing sounds directly into the mic! Something fun I've done with similar recipes to these thighs is cut in half the zested lemons and hit them, cut-side down, on the grill for a few minutes alongside the chicken, and then squeeze the grilled-lemon juice through a strainer onto the chicken.

I don’t have a grill/barbecue. What would be the best way to cook the chicken and broccoli without it? Also, what is feather shred?
@juanitafan24113 ай бұрын
I baked the thighs in the oven to cook them through at 160 degrees for 1h15 & the chicken was fine. For the broccoli, I simply steamed until Al denté. To me, feather shred means longer thin strips, so for the fennel I used the longer cuts on a box grater as I don’t have a mandolin.

Loving your content Brian - it feels like you always read my mind on what I was looking for. I especially love your videos that 'aggregate' meals like this video, and your previous videos on meal prepping. There's not much content out there for quality large meals/feasts, it's always videos on getting a ton of food out with suboptimal presentation (think Quang Tran) OR large feasts that aren't ideal in normal kitchens (think ChefSteps) - which aren't bad obviously!
