I have never heard an explanation why the chicken skin is removed in most Indian preparations. Usually see it in curry recipes as well. Do you have any insight?

good question! I think there's a couple of reasons (from my perspective) - In a curry specifically, the skin would become soggy and undesirable during the cooking process (longer cook time or using a pressure cooker) - For something like tandoori chicken, I have always found that the marinade better sticks when the chicken is skinless. Traditionally, you're also cooking the chicken at a SUPER high heat so the fat would either render off pretty quickly or burn

@@themasalamanIf we look at other cultures cooking methods - the skin is left on. Ex. Malaysian curry with skin, South African grilled (high heat) peri peri chicken. My own theory was that the custom originated before the days of refrigeration when chicken skin would be the first to start to go off and so it was removed. And possibly the tradition was passed down ´because that´s the way we have always done it´ Most working class dishes didnt waste any parts of the protein´, but curiously Indian is the exception. Would love to see you do some Indo Chinese dishes in the future.

@@markpatrickmullen7905 all great points, now I am even more curious to dive in. My guess is your second point in addition to the ease of breaking down chicken. When I travel to India, most of the time the skin (even at the butcher) has been removed. Absolutely, I've been recipe testing a Gobi Manchurian that I am excited for. I am very grateful for your comments and support!

@@themasalaman we have done your tandori chicken twice now (preferring boneless/skinless chicken thighs), with raita, lentils salad and a basmati rice dish I made up using your spice palate with no cumin. One daughter does not care for it. the basmati rice (stove top, no whimpy rice cooker for me!! ) is mild for spice, and I toss in frozen peas before serving. GL with your next creation, we are waiing for it!!!!
