I like 7-8 days fermentation. Then fridge. I put shredded carrots, shredded apples, and shredded ginger root. Depending on what I have at the time. Sometimes shredded beets.

Beautiful, healthy and easy to make. The purple cabbage, is a favorite of my family and mine. I use it, for salad w/ garlic, olive oil and lemon. Now, I can try fermenting it. Thank you, so much. 🙏👏❤️❄️👍🌟🥰✝️

Any food processor will cut these cabbages just as well - also our own two hands!!! You can also get canning jar weights which work really well too!

Hello, Thank You for these videos. I am going to try out those fermentation lids. I am disabled now spend lots time at home. Retired Chef that loves cabbage, I make sauerkraut of forms of all the time. Never knew about these lids. My favorite quick dish is breast chicken lightly breaded and surrounded by homemade sauerkraut in Sautee pan in oven. Kraut juices filling lightly in bottom of pan. God bless

“3 ingredients” 1) Shredded head of cabbage 2) 2T salt 3) Seasoning - Dill, caraway, etc. Shred the cabbage, mix in salt Let sit 30 min Pack in jar and press down in jar with leaf “plate”/lid/tea towel&rubber band Leave out on your counter for 48-ish hours. Taste over the next 2-10 days till it reaches the flavor you love, replace with normal jar lid and refrigerate.

From what I understand, curtido is sauerkraut that has some particular seasonings/spices added to it when you put in the cabbage. Melissa K. Knorr is a homesteader and she has a recipe for curtido.(I think her channel is Pioneering Today 🤷♀️)

It might ! It is salty, but real salt is much better than table salt it has trace minerals ! You should get your magnesium levels checked if you have HBP! Americans tend to be very low of this important mineral.
