What a delightful video! I am a huge fan of the late Dorothy Rodgers. I have all her books, enjoy reading her menus, tips, etc. I feel that you Beth are a warmer, perhaps more relatable modern version of Dorothy. Oh sure you can use a muffin tin, but I would make sure you spray it really well with baking spray since the egg can get really sticky against the metal, and yes you can leave the almond meal out and just add more flour. Hope you enjoy!! :)

I'm so sorry to hear that. I was in France for the last 2 weeks with my family as my girls were on winter break. There's a lot that goes on behind the scenes of these KZbin Channels that a lot of users don't see, like balancing our home life and family life with the demands of a weekly video upload, blog posts, social media, Amazon uploads and Pinterest cut downs and the budgets that can get stretched from trying to do it all. I've had moments in my KZbin journey where the balance has not always been where it should be and the longer I do this the more I realize that in order to go the long mile, I must pace myself and that sometimes means taking a week or two off. It was important for me to take the 2 weeks, unplug and just be with my family and girls who are growing up so quickly at times I feel I'm missing it all. And I don't want to be that kind of Mom that later in life regrets I wasn't there. Or was busy "posting an IG post to promote my new video" instead of watching my daughter zoom around in a go cart for the first time. While yes KZbin is important to me and I want to succeed here, I know that if I fail at being a mom, then really I succeed at nothing. I'm sorry to disappoint you on Saturdays. I know how that feels when you are looking forward to something and it is not there. But just out of curiosity, how will you know when I upload if you unsubscribe? LOL!?
