Chuck roast are $9.99 per lb now. The thinner cut chuck steak are $10.99 or even $11.99 for basically half a chuck roast.

It's easier to find a chuck roast with the chuck eye. Chuck eye by itself is already getting expensive.

A good steak is best cooked on a grill , otherwise you are cooking it pot roast style . I was a meatcutter and a cook both and certain grocery stores would actually sell chuck eye steaks and they are crazily like ribeyes . It is hard to find an actual grocery store meatcutter that does that any more . If you go to a meat market they treat it almost like ribeye so you pay more .

@ I always use butter. Just turn it down a tiny bit till doesn’t smoke. Same for olive oil. Butter tastes best, far healthier. A bit lower cooking temp won’t matter. Any oil other than olive, avocado, animal fats, or butter is horribly unhealthy. Carnivore diet needs healthy oils

Use clarified butter or ghee. Butter flavor with high smoke point.

Its not a ribeye man. Call it what it is. Some of us cut this every single day and yes it is part if the same section...but it's not a ribeye because it is not from the rib section. It's part of the chuck, literally 8 inches before any of the ribs.
