Kitchenaid makes a dicer attachment for the mixer that works well too. Does great on peppers too.

This is so helpful!! I am on the hunt for the Breville Food Processor model number and details to be sure we get the dicer. That is a GREAT suggestion! I do have a lot of people asking about various things I use. I'll check out RuthAnn Zimmerman's channel to see how it's done. As for the foood Processor, it's a Sous Chef 16 Peel and Dice, Model PFP820. It has really worked well for us.

@jennan3407 ball book of canning--roasted marinara. I cut tomatoes in half, squeezed out seeds. Placed on a cookie sheet (also tried grill and roaster) and roasted until somewhat charred skins. Cooled them, peeled them (skins slips off), drained some of the liquid, then cooked them down in a sauce pan with garlic, spices, and a little sugar. Then canned. Worth the effort !!

I did that several years ago when I was making a small batch using fresh tomatoes. Can you do it with tomatoes that have been frozen and thawed out? That's what I make most of my sauce with. I know it would taste better if they were roasted, but since they have been frozen I didn't know if it would work well....thoughts?

I've never tried it from frozen. I imagine it would have more liquid once thawed but you could drain it off and try to roast them. Maybe try a small amount to see if they get a char on them and, if not, toss them with the others?

I realized after I published the video that I didn't address that. The oil seems to keep the raw potatoes from discoloring or getting mushy. If there's no oil, then they should be blanched before freezing. Thanks for watching and for the encouragement.

Thanks for the birthday wishes. One thing I should have mentioned is that if there isn't oil on the potatoes they should be blanched before freezing. The oil protects them from discoloring or getting mushy. (I realized later that I fogot to mention that.) Thanks for watching!

I wanted to ask about you freezing the potatoes - Cook from the UK here, but I always understood you can’t freeze potatoes unless they have been part or fully cooked. Was really interested to see you freeze them raw, with the oil and seasoning (I do this with butternut squash and sweet potatoes so it’s good to know you do it with these too). Do you cook from frozen and how is the quality like once they are cooked? Also, do you use certain types of potato for freezing? Sorry for lots of questions. And just to say, really love you channel - it’s like a warm window into another world for me! ❤

Thanks so much for the kind words and encouragement. Yes, the oil allows you to freeze them without blanching. Yes, I do thaw them before using. The texture has been fine...not mushy. My daughter-in-law often fries them and I bake them in a casserole. As for what type of potato, I've used all different kinds and they have all worked. I was wondering about freezing diced sweet potatoes and noticed you mentioned them. We have the abundant crop this year and was going to ask if we can do them the same way as the diced potatoes. Do you freeze diced sweet potatoes raw or cook first?

@@Longfamily3 I dice them, put in a freezer bag raw then drizzle with oil and season - making sure they are well coated. Then freeze. I cook from frozen in a hot oven. They turn out well and are really handy to have. Hope that helps

I like Fall, but I’m not ready to part with my shorts, flops and Summer dresses. I would love to know the feeling of having a whole beef in the feeezer. I bet that’s nice. Even though I do enjoy the winter months, it's always a sad day when I put away the shorts. It's a great feeling to have that much beef on hand. Our entire family uses it so our kids and grandkids REALLY appreciate it. I would also love to have a buch of chickens in the freezer so we may have to try meat birds in the future. @@waardenburgfamilyfarm4764 Meat Chickens are wonderful!! The meat is so delicious!! If you do cornish cross they are ready in 8-10 weeks. I love getting the chicks in August, when it is warm so the brooder is easier, then they are ready to butcher in cooler weather to work with the meat. If you rotational graze your cattle through the fields in small paddocks, moving them each day, follow three days behind with the chicken tractor of meat birds and they will eat the fly larvae and distribute the cow manure. It is amazing for fertilizing the fields and greatly reducing the flies that bother the cattle. Win-Win-Win!!

The potatoes with the oil have done fine in the freezer....no grey coloring and they don't get mushy. I should have either blanched the plain ones or put them in oil. I'll watch them and if they start to dis-color, I'll thaw them out and turn them into mashed potatoes. Thanks for the tip.
