It’s only natural after a big project (your dad’s kitchen) to be tired the next day, not even counting work & family. Smart idea to tackle a more manageable task the next day! Be kind to yourself. Also, leftovers make for nice lunches the next day. You are doing amazing! 😊💛

I keep a small notebook with what’s in my freezer. I enter the quantity of an item in pencil. After shopping and/or cooking, I change the quantity. It helps with cooking and preparing a shopping list as I know what I have. Hope my idea helps!

A thought on the leftovers..... I have glass 4x6x2in food storage that can be frozen but also heated in the oven. I put single serve portions in each one and basically use them as homemade TV dinners. They can come out of the freezer, take the lid off, stick them in a cold oven so it heats slowly and in 30 minutes you have a no work meal. If you get a few in the freezer then people can choose what they want, or I would use for lunches when kids were at school or if they were at their Dad's.

Maybe you can use the tomato sauce for a chili or a vegetable soup in the crock pot. Leftovers can be a great next day lunch . So sorry that sleeping has been elusive for you and your family has been unwell. You can use bins in the freezer to separate out the meat types and the veggies.

I used dry erase boards, 1 for each frig & freezer, to keep track of contents (including dates). This was successful when I was cooking at home when my kids were little. I'm not doing it now (my youngest got turned 37) but would benefit by restarting.

Yes I do. I used them lots in batch cooking phases but they are way better than disposable bags 👍
