With Lent coming up, I wanted to share a few dozen of our family's FAVORITE meatless meals. They're great for your budget, picky eaters, big families, and even your health. :)

My Frugal & perfect Pad Thai recipe:
Sauce:
2 tbsp tamarind concentrate (from Amazon: amzn.to/3UDk8uJ)
2 tbsp fish sauce
1/3 c packed brown sugar
2 tbsp soy sauce
2 tbsp lime juice (fresh is good, bottled works too)
2 shakes red pepper flakes if you like it hot
1 lb rice noodles
1 lb protein (chicken, tofu, shrimp, whatever)
3 eggs, whisked
2-3 c veggies (shredded carrot, green onion, onion, peas, bean sprouts, whatever)
4 garlic cloves, minced
1/2 c crushed peanuts
Cook noodles as directed. Cook your protein, cook your veggies. Add sauce ingredients in a mason jar and shake, then pour over all the veggies/protein in your frying pan. Reserve a bit to drizzle over your plate of noodles along with the crushed peanuts as a topping.
