When people overseas think of Wagyu beef, they may imagine marbled and oily meat, but I would like you to enjoy the lean meat of Wagyu as well. I think the mellow, natural aroma and flavor of the meat makes it a great experience! By the way, the wasabi that the chef introduced is real wasabi. Cheap wasabi is colored horseradish and has a completely different taste and aroma!

if you watch the other video which Aden posted in the description, the chef details the preparation there. It is the same chef and place. He takes the raw steak and slightly cooks it on low heat so that the steak absorbs the salt better and to allow it rest and suck in some of the juices before cooking it on a higher heat to get color and temperature.
