At 2:59, and pause the video at that point, we can see a majestic view of the Alpine environments high above the usual ground level. Planet Coaster may be using a "sky sphere" model of the sky and some of the backdrop art not usually visible from the ground level. It is neat tht computers could some of amazing things in some games like this.
