As a former subway employee, I feel compelled to inform you that the honey oat bread was just the wheat bread with dried “honey oats” from a packet sprinkled on top. The Italian herb and cheese was just the white bread with oregano and cheddar from behind the counter sprinkled on top.

I’m no expert but a tip for keeping high quality uni fresh for longer is to keep them submerged in salt water. Sea urchins are filled with salt water so keeping the uni in salt water keeps it in a stagnant state where it won’t get fishy and mushy. Learned this tip from Outdoor Chef Life, made my life a lot easier when I buy uni from the supermarket and whatnot.

Fun fact about the tuna not actually being tuna story, there is some merit to it. If you order “white tuna” sushi it may be albacore, or it could be escolar which is a tuna bycatch. For a genetics course in my undergrad we DNA tested “white tuna” for a project from several different places and it ranged from tuna to escolar to shark in one case 💀
