Yes exactly ❤ I always open the ovens door slightly for a short time when the baking it’s over and then close it again for 5 minutes. Then I open the door slightly again and leave the cake there with open doors for 10-15 minutes :) only then I transfer the pan to cooling rack but leave the cake in the pan for 30 minutes. Only then I would take the pan off :/

Honey isn't poisonous when heated, what they are probably referring to is HMF (hydroxymethylfurfural) which becomes toxic in very high concentrations. Some of its byproducts are known to be mutagenic to mammals but HMF itself has no carcinogenic or genotoxic properties. For reference, heating honey to say 150°C will increase its HMF concentration from around 25mg/kg to around 85mg/kg. Sounds like a big increase right? Coffee can contain anywhere from 1500mg/kg to 2800mg/kg. Anytime you create a maillard reaction or dehydrate something with fructose you're going to create HMF. It's another "scary" internet rumour probably conjured up by somebody who has no idea on the relevant matter and passed it off as fact, after hearing it in conversation somewhere. Hope this helps!

@@BeckyA59 The thing is that’s what red velvet cake used to be. 99% of red velvet things from the last four decades do not represent that old method. No one uses the type of chocolate that created that color any longer. So, to me a modern red velvet cake is just a red cake that’s really moist and has some type of sour aftertaste due to sour cream or cream cheese or vinegar being added.

I have made the date snickers like this and then I tried a bark version where you flatten the dates in a layer first and then I spread in crunchy peanut butter and a sprinkle of finely chopped “sundae topping nuts” and then added the chocolate layer and sea salt and I liked the bark version much better!

Real Red Velvet cake does not need colorant. It's the natural cocoa mixed with the acids in the recipe that turns it red.

@yazdhenab. California has banned red 40 and the FDA has signaled a national ban is likely coming. Red 40 has also been banned for some uses since the 1990s here. Many companies have removed it voluntarily because they anticipate a ban.

@@yazdhenab.It was usually vinegar or buttermilk - when it's mixed with non-alkalized cocoa powder there's a reaction that creates a natural red tint. Most cocoa powder used nowadays is dutch-processed, which has an alkalizing agent added, which means the reaction won't occur, so most red velvet you see nowadays will have some food dye in it.

So let the cakes cool a few minutes, like 5 (while still in the pan) to settle bit and then flip them upside down (still in the pan) on a cooling rack and let them cool for another five min at least, that helps keep them fluffy and not deflate

I was confused by that too but I think she was just referencing how people make no-bake cheesecake in a similar way, but this is just as easy (and I think tastes better) than making a no-bake cheesecake. I don’t think she meant to imply that some people “bake” tiramisu. I think most people know tiramisu is already no-bake. That said, I’ve had some tiramisu-style cakes that use actual cake instead of lady fingers, so she could be referencing that?

I think a suggestion to stop the cake from deflating is to leave the cake to rest upside down, though it might fall out if you have the baking paper around the edges

Tip for more fluffy cakes that might help (not always) don't take It out of the oven, keep it inside until It will cool off. Make sure to open the oven a bit and turn It off - this way cake will be cooling slower without loosing so much of It's fluff as It get flatter because a sudden cold air.

I watched a couple videos and just some friendly pointers - when you start with butter and sugar go ahead and use a hand mixer to make sure you’re really creaming the butter. With the chocolate chip cookies and the red velvet cake cookies the batter was split pretty heavily. You want to see the butter lighten in color significantly. Your batters never properly emulsified. Hope this helps!

It's not tiramisu cheesecake, it's a pretty normal tiramisu cake recipe. Tiramisu recipe in general doesn't require any baking (what are you going to bake, mascarpone cheese?)
