For the mashed potato bites - How would the timing change if I used a regular size muffin pan?

Great question, I appreciate you asking that. I would keep the same temperature and bake them 5-10 minutes longer than the original recipe suggestion. Start with 30-minutes and add an additional 5-minutes if needed. As long as they feel slightly firm when you press down on the center, and they pop out of the muffin cups easily, they are good to go! You'll have to let me know how they turn out for you. ☺
