As someone who has worked in the food service industry for many years, I can say it doesn't surprise me. So many kitchens cut corners & get lazy & it takes multiple complaints before anyone does anything. There's almost no state or local oversight or health inspection most of the time. It's more a testament to the miracle of the human immune system that more people don't get seriously ill after dining out.

I have been in a few kitchens and if people actually knew how bad they were with sanitation and safe food handling they would never eat there again. Rotton food is being served to people who could die of food poisoning or other assorted illnesses from food not being properly stored or washed. Temperature is extremely important. I smelled a cooler that had rotten chicken in it and believe me, I could not bear it and ran for the door. They were actually going to soak it in salt and serve it. Nope. I called food safety and they came and shut it down. That is the attitude in many kitchens including high-end ones. Gordon is trying to change that, one kitchen at a time.
