Nothing like making a classic Spanish tortilla, using basic and simple ingredients, to create an iconic dish. Obviously, you take lots of care in explaining the technique for cooking the perfect tortilla, and basically, you just change some the ingredients, and you have a totally different flavor. As you're cooking, I can hear and smell the oil heating up on the pan and then add you add the ingredients, especially the garlic...so aromatic. That's what cooking is all ABOUT. Cooking with luv is a sensory experience. Really enjoy your channel.

I just recently found this channel by random and I am glad I did. Many of your recipes bring back memories of my Spanish family in Sevilla. Especially when it comes to Tortillas I can highly recommend how important that plate is when you flip a Tortilla, so that was one of the best gifts mi tia gave me and I am still using it. If there are people who still struggle with finding the right size for a plate, so called "pizza plates" have almost the best size. Turning over the tortilla is in my opinion the most important part that can make fail a perfect tortilla if not done correctly. Well, I am glad that I have found this channel👍.

For the mushroom tortilla, I'd add the mushrooms first, let the liquid escape from them first, then add the onions. You will avoid steaming or diluting the dish when you add the eggs, and you'll really bring out the mushroom flavor.

Onions always go first, to lighten their flavor. But absolutely yes to removing the moisture from the mushrooms...I think the way the video showed results in mushrooms that provide too diluted a flavor and a texture that is difficult for the eggs to properly bind.

I'm glad you said that Randolph! I really think all his cooking would also be much improved if he would start by caramelising his onions, first. Also you need to take out as much of the water out of the mushrooms if you want them to taste of anything. Garlic should be added later and cooked until you can just smell the garlic's fragrance, then you are ready for the wet ingredients. I like his recipe ideas and they are fairly Spanish to be honest, but it does make me want to shout at the screen when I see he just throws everything in the pot, like he does, as he's missing out of those depth of flavours. Also extra virgin olive oil really is not suitable for all the frying he does in his recipes either, but a lot of what he makes would benefit from adding a little splash of oil at the end to give sheen and extra flavour of the oil he talks of. He's a nice guy and I hope to see more inspiring ideas but you must cook the way you see fit, his way is not my style but we can all adapt to suit our tastes.

Spanish tortillas, or Tortillas Espanola are the bomb. When I make them, I can never seem to find a plate that is big enough or not too big. Instead, I use a flat baking sheet. It takes a little geometry to flip the tortilla without losing control but it works great. And the fact that it's flat makes it that much easier to return it to the pan. Again, great ideas on variations of the traditional recipe.

It is Sunday noon, I just came back from the gym, the supermarket, the laundry and I have not eaten neither breakfast nor lunch. I decided to empty my fridge from last week groceries. I have some mini cucumbers, mini bell peppers, some fresh white asperges stalks and eggs. I also have onions, garlic and fresh coriander. I chopped everything (the 4 asperges stalks I julienned) and mixed it with the whipped eggs. Added some salt and black pepper. I prepared the omelettes just the way you do it. I ate it with some slices of rye bread. There is nothing better to start your day. Next time I will also make a fresh green salad (ensalada verde) as a starter. But I was very hungry so I didn't take the time to do this.

To make up for using coconut oil instead of Spanish olive oil, I added some of the Kiva Sweet Smoked Spanish Paprika you had recommended previously to this Spanish potato omelet. Omelettes are so versatile! I respect the traditional combinations, but an omelette can also be made using any leftover vegetables you may have in your fridge, as well as scraps of ham or bacon, grated cheese, or herbs. @@LindaC616 Here in the UK, Spanish Manchego cheese, from ewes' milk and having great flavour and creaminess, is popular nowadays, but British supermarkets' spring onions (scallions) are often spindly and expensive, the green parts looking pretty unappetizing. I tried the potato tortilla today, trying to mimic the recipe as closely as possible. The taste was very nice and very little tortilla was left after lunch. So this is a very good recipe. Having said that, the potatoes took 30 minutes to tenderize for me and I had to cover the pan to soften them enough. Also, the shape didn’t come out right and the tortilla was partly broken. Perhaps there is a balance between the amount of eggs and potatoes that I missed. Thank you very much for sharing this recipe chef. I will be trying other Spanish recipes now. 👍🏽

I'm so impressed with your simple yet elegant recipes. Just subscribed. I made your tortilla omelette with potatoes, minced hot dog, garlic, tomatoe sauce , paprika and eggs of course. I don't know if it's Spanish but it certainly has the influence.
