for the horse grading system, you can replace the lights with redstone lamps, so you can see how fast the signal is going.

Pretty sure you can also just place fence-gates. Activate a redstone signal and run through them, and however many you get through, before they close, is how many blocks/second your horse runs.

Luke, you GOTTA build a gravity effected blocks duplicator in 5000 days. Their SUPER efficient and are the only way to get renewable sand and concrete, and by far the best way to get renewable gravel

You can change your current armour trim with another one you want. Just simply put it in the smithing table again and it will change. You can also get rid of Particles from your beacon powers by going into Video Settings and turning Particles to Minimal.
