I do appreciate what you do , it is inspiring definitely. There is something what i saw during service that it made me thinking that even cooking on this level and being completely unique you forget that your team doesn't have your mind so you can't expect them to be everywhere and at the same time cleaning etc just example of your type of cooking that requires a lot of attention!
