You can make indivudual meatloaves in a muffin tin. Iwas at a mother-daughter banquet one time and they had meatloaf cupcakes. They made the meatloaf in muffin tins and piped the mashed potatoes on the top like icing.

Lisa, you can do the mini meatloaves in muffin pans and if you put mashed potatoes on top they look like cupcakes! 😊

I have always done them as meatloaf muffins. They cook way faster and i par cook half for the freezer to either finish in the oven or microwave so they don’t get dry. That’s how I got our girls to eat different veggies when little because they could put veggie decorations on the mashed potatoes on top of meatloaf mountain but they had to eat all their decorations!❤

I use a muffin tin and make meatloaf cups with pillsbury croissant dough and mashed potatoes. I love it mixed with stuffing. It more flavorful than breadcrumbs. Love the pink hair! ❤
