Hello there, how much encoder resolution do you think its the minimum to obtain a good micromouse?? If we asume similar size of the wheels of this robot?? Or how much its the minimun acceptable.

I'd say 5000 counts per 180mm distance travel for minimum performance, which leaves you very little choice.
