Cheese dip is really easy to make actually. All you need is some cheese, milk, butter and heavy cream. The heavy cream is optional too it just makes it nicer. Heat up the wet stuff, add the cheese and stir until thick. I made one recently using milk, butter, heavy cream, assorted blend shredded cheese, shredded smoked gouda, a little chili powder and some pepper.

Hack for using a mandolin...take a corn cob holder and poke it into the thing your slicing and hold it. When you hit the metal prongs, it's time to either stop or turn the thing over.
