Along with these, I also love the ‘waistcoat stitch’ for knit look, and you can line it up in the typical orientation I am used to working in. Not as stretchy though

I really think your hook insertion is wrong in the waistcoat stitch. it's not supposed to go between the legs under that belt, rather in the middle of the V, (or between each set of two legs). By inserting it the way you did it's not giving a knit-like look because the new stitch is not aligned with the below stitch on the previous row
