First of all when you buy the grain make sure is says Gluten Free. Its got to be on the package. If the grains are in a bin you run the risk of cross contamination and that's on you. My breakfast cereal is a combination of grits, quinoa, brown rice, oats, amaranth, buckwheat, and millet. I take 1/4 cup of each one with 2 tbs of chia seeds, run it through my mill and measure out 1/4 cup. It comes out to 324 calories and 53.5 g of carb. I really like this combination
You should have included teff. It's packed with many nutrients, including iron, magnesium, and calcium. It is great cooked. And it can be made into a flour with a high speed blender or food processor, best used in baking when mixed with other gluten free flours.

FYI; Oats have gluten in them but under a different name, according to Dr. Joel Wallach from the youngivity line of Vitamins and mineral called the Mighty Ninety .

All grains (well 99% of them) have gluten proteins. In the EU, food labelled as gluten-free must not contain wheat, barley, rye or oats (added recently) glutens above 20ppm. In Australia/NZ they are even stricter. It is really annoying when people talk about 'gluten' as if it is one chemical substance. There are many web pages that say stupid things like 'rice does not contain gluten' - so what is orzenin then!

I am a Functional Nutrition & Lifestyle Coach who specializes in working with people with gut and autoimmune issues. While I can agree with much of what you are saying regarding the nutrient content of these grains, people with these types of conditions need to temporarily or permenently avoid grains like these, or soak or sprout them to remove a good percentage of the anti-nutrient lectins that fuel an inflammatory response in the body. Same goes for nuts, beans, legumes, and seeds...sometimes nightshades as well. I agree though, that these foods can be great for those people who are generally healthy to include moderately in their diet, if well tolerated.

Gluten is not the problematic dear, if you take unfiltered flour of wheat and barely I does not harm your intestine, Inflammatory bowel disease such ulcerative colitis and crohn disease takes place because people are taking bread of filtered wheat flour that is free from fiber, and if you take gluten with fiber it does not harm your intestine

If white rice is eaten with a protein source it is broken down into your body at the same rate a brown rice! So no different as long as you aren’t eating white rice by itself!! Enjoy:)

Black rice taste much better than brown rice , you might want to look for that...the water turns sort of a purple color . And you can make a cold salad out of it that's really good . Amaranth is supposedly the most ancient grain around , it is super super tiny really tiny and has a grassy flavor you might like it . There is a wheat that goes back 10,000 years...EINKORN.. it is not a GMO , it has never been tampered with and they think it may have been the first wheat ever used by humans .. regretfully the wheat in America is garbage and is a hybrid that was meant to give high yield , it has very little protein and is not fit for human consumption... that wheat in America is about 14% gluten . This other wheat I'm telling you about is less than 1% gluten ,has a better flavor and a higher protein content.... it does cost more and so far the only place I could find it was at Whole Foods ( and I don't go there , I don't like giving them my money .) The only brand I know of is called JOVIAL there are a number of videos here about it and also how to cook with it , as it is not like regular wheat flour . You might want to check it out . There's also bulgur wheat which has a heart of your flavor and is not really wheat , I know Bob's Red Mill sells it . Out of course there's always barley and I think Bob's Red Mill sells that and all those grains . And there's also buckwheat which I think is not the same as regular American garbage week... I forget if it's buckwheat or bulgur wheat that they used to make tabouli and if you've never had tabouli believe you might really like it... personally I do not put mint in it , I think it ruins it .
