I've seen, and worked at, many places that try to replicate or do their own take on the eggs and caviar, the biggest thing I think they miss is the texture of the egg, watching this clip really emphasises how creamy you need the eggs to make the dish work so well, to take it from a good or great dish, to a truly memorable one.

Dish #1. Caviar has such an elegant salty flavor, I would have used micro onion sprouts instead of shaved chopped fennel, that punch of anise would muddle the natural taste of the caviar, also I wouldn’t have used the dill garnish, I would have gone with a micro fine chive and just a few drops of creme fraiche. Dish #4 the chef is wearing a Rolex Batman GMT ll, that’s my favorite time piece and daily go to. He gets extra points for his watch game!

It's called a multi-course dinner you pleb. Each of those dishes is only one of the 10-12 courses for the entire meal.

Some of the nastiest looking things taste the best. I used to hate sushi because I thought it looked like some type of animal poop but it’s one of my favorite foods (if not my favorite food). You should try Beef Wellington or Risotto it’s very delicious, although quite pricey..

@@Juuk-D I love sushi, especially sashimi, but the idea of raw crustaceans doesn't appeal to me. They live on decaying organic matter. I would of course try it in a restaurant setting.
