A. Why is Indian food being forced into confirming to the western standards by these restaurants? B. Why is it necessary for a cuisine as vast as the Indian one forced to fit into these western templates which have been created from very limited range of tastes? B. Would you ever expect this adaptation from a fine French restaurant? Would you expect them to present a French version of the Paani Puri? C. This is nothing but the colonial coolie mindset in these restaurateurs and chefs coming out as sophisticated fusion Indian cuisine. This is pure rubbish. D. Real Indian food is so much more deeper, has so much more meaning, will take a lifetime to explore, understand and appreciate.
