I swapped the potatoes in the tortilla with Ox liver (really cheap) and Instead of deep frying, i pan fried them with chilies and thinly sliced garlic and one whole onion. AMAZING!!! Just the flipping is a bit tricky.

That Spanish omelette looks delicious. My uni friend showed me a different way back in those days and that was to cube up the potatoes, add the onions, tomatoes, garlic and seasoning and let them cook until soft. Then add the eggs and cook in the same way as your friend, the result was really good.

Using an immersion blender is so much faster and easier than that way to make mayo. I like the white lady drink. I poach my eggs like that most of the time. But I add a bit of vinegar to it. It makes the white wrap around the yolk better. Gennaro was awesome.

He's doing tortilla for 4 people, and he potatoes need to be covered in oil. You can reuse the oil, as he says, so it's half a liter you can use lots of times. Don't use it for other things, because it tastes of the potatoes.

He's frying the potato, using a lot of oil to fry something is kind of common, the oil is reusable for frying other things. But half a liter of olive oil is expensive..

what i love about this, it is all made with stuff in a basic kitchen, i dont have vanilla extract, or challiots in my kitchen, like all those cooking/beauty guru's all claim to be in a basic ktichen, but i do have patatoes, and some vegmix and oil, THIS IS PERFECT the eggsact eggrecipies i was searching for, you guys did an eggselent job (common, i had to pun it)

Hello Jamie, my hens are also free range. Of course since I live on a farm and only has a few to get eggs for myself. My question is, for the first three recipes, are you not afraid of salmonella since the eggs are not heated? I was always told that hens that get in contact with wild birds very easily gets salmonella.

egg yolk and oil..you have a basic mayo. Use olive oil to make a healtier version. squeeze a little bit of lemon/lime and little bit of oil...u'll have a store-bought mayo. put grated garlic...or mince chili...or ketchup...u now have a mayo :)
