Thats pretty good, ik putting lettuce and stuff on bottom keeps it in place, but perosnally i like it better on top, also, if you want your cheese to melt on your burger, get a lid for the pan, and put a little bit of water in and cove it, the steam will melt your cheese perfectly.

To the bottom: Burger sauce, tomato and pickles. Then the patty. The sauce and the moisture from tomato, pickles and patty keep them solid. On top of the cheese length wise cut salad. On the lid the sauce. Thus the cheese and the sauce keep the lettuce in place. Solid burger.

Plus then you have bun insurance for when the burger and bottomings start sliding. You can guarantee you won't be without bun at the end. I actually build my burger off center so the patty is closest to where I'm taking my first bite, so it has plenty of space to slip around.

Be careful with the pepper before it's done cooking. It twnds to burn. Best to wait until you pull the burger from the skillet, then pepper.

Light scrapes like that won't scratch the seasoning at all, and even if it does you can always reseason. That's the beauty of cast iron!

Really not a big deal. Flat tops are seasoned steel or cast iron and see metal utensils all day every day. Teflon and ceramic are the no go's.

Don't add pepper until after you pull out of the pan. It burns really easily. Adding salt early is fine.

I prefer the cheese to be melted all over the patty, rather than the perfectly shaped square. Like Five Guys, instead of In-N-Out. I prefer the mushy untoasted bun too.

If you use American cheese, like most chefs recommend and burger places use, it will totally melt just from the heat of the burger. There will be no shape to it. The fact that it melts so easily and quickly is why you put it on just before removing from the heat. Other firmer cheeses need more time in the pan, and some need to be totally covered to get started melting.

Cast iron is the one type of pan you should use metal on lmfao. That's specifically why I use them.

Bun was burnt and toasted unevenly. Instead of oiling the pan, try buttering each side directly, then pressing the actual bun into the pan so it has 100% contact with the heat. If you don't do this, the buns tend to curl up and just the ends get toasted (or burnt in this case), while the middle just ends up soggy with melted butter/oil.

I prefer to put cheese between the patty and Lettuce/tomato to stop the salad type items from getting too warm and wilting, even if I have to use two different slices of cheese, which I usually use sliced cheddar instead of American cheese because I prefer the flavor profile, same as using butter instead of oil

Use butter to toast your buns, not oil, oil tends to get too hot and burn the edges before toasting the center. Simply butter the bun, and it will always toast completely before it burns.

Top layer will slide with that sauce, just sauce the bottom. Also no need to fry your buns, dry toast them has the same effect and is nicer.

If you cook your burgers at higher temps don't add the pepper to the uncooked side, you'll burn the pepper

For most ingredients I think toppings work better because the texture ISN'T changed by a heavy burger patty sweating on top of it. I also disagree that a perfect burger has salad inside. Jammy onions and pickles for the win.

Pro tip. Make a checkered bored with your spatula for shrinking. Good smash, then checkered board works wonders on any size burger.

The burger juices still seep in but a toasted bun doesn’t immediately get softer from the juices it will retain its crisp for a while making it seem as if no juice has gone into the bread when it indeed has just as much as it would untoasted
