thats not true at all. it really depends on the culture you're from. bigger gives a tougher bouncier texture and is more prized for in asian culture, meaning more expensive. the flavor is also heavier in the bigger lobsters, less sweet, more bitter note

It's the same way with crawfish. The later in the season (larger), the tougher the shell and meat. I like them mid-beginning of the season til the beginning of the end of the season.

Note: bigger lobsters tend to usually be the older lobsters, and those older the lobsters the more changes it has. Younger lobsters are way fresher than older lobsters, as when the lobster becomes older, the muscles tendons and meat become more firm. So when you cook the lobster, it’ll be tougher, but juicier, and also soggier

Smaller lobsters taste so much better because they age around 7 years per pound..2 reasons why we done eat large lobsters.. 1 they taste so much better.. 2 them big boys make babies.. So once they are 35 to 50 years old.. They typically are too big to be caught.. So let them live.. Mate and make more food.

I used to cook seafood professionally so happy to drop a tip for a bigger lo ster tail. If you flip the tail meat when you pull it put and score the back side with a few diagonal cuts it will keep the tail from curling so much and will help not to overcook it...should take care of the performance anxiety 😂 cheers!

I could be wrong, but you have to realize something. The small lobster tail belonged to a substantially younger lobster. The younger lobsters are a lot stronger relative to their body size. The large lobster tail probably belonged to an 80-100 year old lobster, just like humans they begin to apathy. Their muscles become weaker and they may even lose use of body parts like their claws. What does that mean? It means that there's really no point in eating a 100 year old lobster other than to flex that you can pay $150 for a lobster tail. You're better off buying a bunch of smaller lobsters. I mean if you logically think about it, how good should you expect 100 year old animal to taste when compared to a 20 year old animal in its prime? Also, their claws begin to blacken which means their meat is less sweet.
