It already has ambient sounds and you can even move the ambient sounds by placing the blocks of the pale garden in different locations. Both the mob and the blocks have the sounds.

Oh it is impossible to kill them, even warden can't, BUT when you hit them particles will show up and if you follow them it will lead you to a block with some weird yellow things on it, and if you break that block the creaking dies. But it is very likely the block is in one of the trees

The creaking stuff ain’t even released yet, it’s an experiment, same with redstone changes and minecart changes. 1.21.2 have the bundles and the bedrock hardcore while 1.21.3 or .4 will have the creaking things

It's because they switched to releasing feature drops every few months instead of making major yearly updates. And don't forget about snapshots, they make small tweaks to the game once or twice every week. Plus they have to code it in C++, Objective-C, and Java, and make it compatible for PC, mobile, and console.
