Your work is mesmerizing! You are truly an artist. Your husband told you not to turn the AC on? I would have told him where to go. You are making all these intricate cakes and humidity plays a huge role (one which we do not need!) You go ahead and turn that AC on, and tell him it is a requirement to your job!!!!!

You could use white chocolate ganache if they prefer that. But you would not be able to get the deep color. You could use candy melts. They cool hard, but when it is cut, it would come off. It is still yummy! Crumb coat with buttercream and they would still have that.

Thank you;) I don't think there is a hood answer for that other then utilize your refrigerator until you have to bring it out. Chocolate does not like heat or humidity.

Thanks! Just like normal;) The chocolate ganache softens up at room temperature. The details may pop off here and there, but there is still a good amount of it underneath.

What’s ur ganache ratio? Will u make a video or give a ratio of white chocolate n dark chocolate

The dark is 1 part heavy cream to 3 parts chocolate. White is 1 part cream to 2 1/2 to 3 parts chocolate. 2 1/2 for a drip or glaze. 3 for covering a cake like a frosting.

I would sat it is the same as any other cake. The chocolate will soften as it comes to room temperature. Some of the triangles may pop off but I think that is ok;)

I like to do 3 parts chocolate to 1 part heavy cream for this type of technique. Heat your cream for about 2 minutes in the microwave or until it starts to simmer on the stove. Remove from heat and add the chocolate. Let it rest for a couple minutes and whisk till combined. If you are adding the oil based food coloring, do it right after you whisk it. If it is too runny it will be much harder to work with. And wait until you can pick up the mold without it dripping out to put it on the cake.
