You actually can use honey for kombucha, it’s called Jun. It does require a scoby that is meant for honey kombucha though. I’ve brewed it and it is much smoother tasting than regular kombucha.

Hi and thanks for this great video. I have a question regarding the balloons. Do you pierce them so that they don't inflate too much? Or do you just leave them inflate a lot? Should we remove them from time to time to remove the gas? Thanks

1.200! Wouldnt that be over 25% expected abv? Not sure if american hydrometers measure differently to european but mine only goes up tp 23% abv and its below 1.200. Great video btw!

Woodsman93 na, it will blow off if to much pressure. Add a new balloon. The real object is to keep asmuch floating particals from getting in the fermentation

First time using the balloon. I used a 12 inch balloon. Will that be sufficient with bread yeast? Hope it won't break on me...

Terry Robinson . If it breaks that means to CO2 pumping out is from large reaction from the yeast. If you're checking your balloon regularly every 3 days you should see if it popped or Not by replacing the bloom. One good thing is as long as it's spewing out gas nothing is going in for contamination so using the one gallon jugs has a small ventilation hole isolating down contamination the balloons were good if you have to replace them it's okay

How long does it take for this mead to be ready to drink?

30 days after bottling You can drink mead from start to finish in 60 days. Best flavor comes in one year after bottling. Two to three year aged meads are incredible. But small batch runs do not last long at any home.

You added enough yeast to make 5 gallons for one gallon.? WHY?? Should? all the honey be eaten by the yeast after the two weeks of fermenting.? Will mead continue to ferment after it it bottled.?

I use yeast 1 pack for one to five gallon 2 packs five to 10 gallon 3 packs 10 to 15 gallon And so on> I am getting a great product in 40 days and in 6 months it wins awards. I feel I am getting consent fermentation, and it makes a good yeast cake so you can re use it for the next brew, of the same kind. The honey is gone by time, temp, and type of yeast. you have to kill yeast or any sugar will activate it. so some add a 1/4 cup a sugar to a mead that is ready to bottle to make bubbles..

You can if you are using hot water to dissolve it. Unpasturized honey will have bacteria that will make the flavors unpredictable. So you'll want to heat it up to kill the wild bacterias.

They made mead, beer, and, wine, successfully, and, well long before they even knew what bacteria was. If you heat up the honey, you will DESTROY it's flavor. All this "sanitizing" nonsense needs to stop!

yes. baking yeast is very common in mead making. it out get Alc to 9% but has mass flavors. takes time to work. we are making meads and drinking in 40 to 60 days... it would take 4 months min to make a mead
