shop at a different store, look for sales. Never go into a recipe with a specific cut in mind, see what's on sale THEN look for a recipe 💸

Tried out your Low and Slow Prime Rib method. First time ever cooking such an expensive roast. At 20 minutes per pound it was rosy medium rare almost from end to end. And the absolute lack of effort was as rewarding as I though it would be. Almost as rewarding as all the sandwiches I get to eat this week! Happy Holidays Chef Jon! for the Thai Tri tip, I might go with a dose of peanut butter rather than the vegetable oil (and a small part of the sugar) and also go with some more turmeric and add some bright colored sweet paprika for color.

It's just called Tri-Tip. You can definitely find it at Costco.

it's a leaner cut, i think i've seen it called a sirloin tip or even a "bottom sirloin" or some such... i've heard it's more of a cali/west coast thing so it may not be readily available further east in the US. my family in north carolina have had a hard time finding it
