I’ve made this dish once or twice a week so far since 2017. I’m in college learning how to cook. Delicious. I add garlic. It’s cheap (not the pecorino), fast, and easy to make triple batches of to eat multiple days in a row. More nutritious and fun than ramen I’ll tell you that.

In 2014 my husband and I sold everything we owned and decided to become full time RV'ers and travel across the U.S. Cooking gourmet meals can sometimes be challenging when you have only a convection oven, a microwave, a two burner propane stove top and limited counter space. Since I discovered your channel I have now found easier ways to create amazing meals using basic food items and simple techniques that don't require tons of prep time or a big fancy kitchen. Nice, simple, receipe. Actually it's more like a method than a receipe in my opinion - as long as you get any combination of ingredients with the same qualities (savoury, salty, sweet, sour, spicy) your pasta is going to be great! For example, perhaps not traditionally Italian, but I would easily substitute the Pecorino for Feta if that's what I happen to have in the fridge :-) Add some orgegano and you'll have lovely Greek pasta! ;-)

I went out and bought the ingredients to follow the recipe properly for once. The saltiness of the cheese and the heat of the chilli are overwhelmed by the acidity of the lemon/tomato (ignoring zest pieces) and the fruitiness of the oil (which did persist after cooked, though I did go fully NC17). The cheese may be skimping on my part (it's expensive and new to me), but it doesn't seem that salty even raw. The chilli is just straight up useless. The pieces themselves have no flavour. Unfortunately I haven't been able to source anything better. Perhaps I can throw in a couple of birdseyes or trace habanero and pad out the volume with capsicum? The rest of the lemon wasn't used? not that the dish needs it.

I thought passata was uncooked? I couldn't eat it raw on top like that, I'd gave to cook it long enough to kill the raw tomato smell and taste - 20 minutes, minimum.
