For this video, I attempted a $600 Dino Beef Ribs Platter Challenge consisting of over 5KG of USDA Prime Beef Short Ribs and assorted sides cooked painstakingly by a self-taught chef, Jett (@jettbarbecue). Jett is a one-man show running his whole business entirely though Instagram orders and cooks at his home with an imported off-set smoker.
The ribs are slow-cooked in a wood-fired smoker for over 12 hours and come out deliciously tender, smoky and dripping with glistening beef juices. They are truly massive, easily covering the length of an average man's arm but thrice the width. Each rib weights around 700g after cooking. Jett's smoker requires the traditional step of stoking and maintaining the fire throughout the entire cooking process by the addition and fanning of wooden logs. Hence, the ribs shown here are the product of many hours of labour and love.
In the hands of a skilled specialist like Jett, the temperature is more consistently maintained versus the modern automated systems, resulting in brilliantly tender meat infused with the flavours of his marinade. The ribs are served with 2 homemade sauces, a barbecue sauce and a white sauce. Both are tangy and on the acidic side which helps to cut through the extremely rich and fatty ribs. Eating the ribs with the sauces is a life-changing experience.
The ribs come with mashed potatoes, arugula and pickles, every other side shown is not sold and provided specially for this challenge. The sides offered all serve to complement the strong ribs flavour.
