Either he has a great photographic memory as to his hand positions, or he has a setup to match the position of the previous shot to the shot he's about to do. Usually what is used when doing motion graphics work to ensure position of the frame is as precise as possible... without it, its a guessing game as to where the previous position was.

What are you talking about, there is no editing. Didn't you watch the video?? He explains each process in detail, even giving options to a few. If you haven't thrown your potato at the wall to make chips (or haven't succeeded at it yet), just ask for more tips from YSAC. Don't just dismiss it as impossible. When I was a child I could not whistle, but now it is almost second nature.
