I have a question for anyone capable of doing what I just saw him do. This isn't a gotcha question. I want an answer from someone who actually knows how to ride like that. I saw him cut left across 2 lanes to go around 2 cars that were driving beside each other. Let's say that while passing them, the car nearest to him chooses to come into his lane, and he is leaning towards the right while passing them on the left. So he's leaning over halfway to touching knee, which seems very committed to me. How do you lean away or turn away from the vehicle coming into your lane at that point? Is this an impossible thing to do, or is this an easy task for bikers who race? An example is at approximately 7:13 - It's not the best example, but that should give you something of a visual idea.
