Yeah in this house we are not scared of carbs 😍😍😍 I am very careful not to restrict myself any further than being vegan, that kind of thinking is so detrimental for my mental health 🌿

Hey Gittemary… I’m really liking this consistent Monday & Friday video release schedule. One other really cool thing about this schedule is that now I have the weekend to try out some of these lunch recipes (which will be my dinner recipes). I’m a high school sewing teacher and I pack a lunch to school everyday… my lunches are plant-based, healthy, and satisfying but they truly are quite boring compared to your lunches. I too don't usually buy avocado mainly for the high price it has in 🇲🇽 that comes from exporting to countries like USA but fortunately I can just go and grab some from the avocado tree in my grandpa garden... They are the kind you can eat the skin too and are delicious 😋 wonderful video great ideas ✨

Have you ever tried making Korean vegetable pancakes? They're totally delicious! I became completely obsessed (I'm still obsessed months later), so I developed an oven method that uses much less oil, so I can eat it way more often. In fact, I often make them for breakfast. :)

@@Gittemary OK I had replied to your comment days ago, but the comment has disappeared. That's frustrating! Anyway, the recipe I used is by Maangchi, so search for Maangchi vegetable pancakes. The traditional way is fried with lots of oil, but I developed an oven and air-fryer version which uses much less oil, if you're interested. :) You can use just about any vegetable within reason (for instance I wouldn't use fresh tomatoes because of the juice), including greens and winter squash.

One pot lasagna is always my favourite (I never pre boil the lasagna plates).

I have never heard of pre boiling the sheets, the starches that’s released during cooking will help firm up the lasagna, so I would never skip that step 🙌🌿

How do you know when plant milks (oat milk, soy milk, almond milk, etc) go bad? Regular cow milk has a sour smell, do the others have a different smell? I've been going off the date guidelines on the cartons, but end up eating so much because I can't tell if it's actually bad yet or not

I think avocado impact is better in regions where it rains a lot like in the Dominican Republic and worse in regions where it doesn't like in Southern Spain

I really wish the vegetarian/vegan meat substitutes would taste better. I have found some really good foods already to substitute meat, but some are so nasty! Just tried vegan minced "meat" and it had such a strong, funny flavour I had to put it into the garbage.
