Agreed on most points, but I must disagree on "production comes down to getting a song to sound professional" that's engineering. Production (traditionally) is the high level thinking and decision making of the whole thing that results in its translation to a real audience. it is not the music or the sound 'quality'. A production decision might result in an engineering solution, but they are not the same. In the same why a film director doesn't operate the camera or write the script. Yes I'm arguing semantics but I think it's important to recognise the separate processes whatever you call them in order to become better at them (also it actually pays to know the difference as producers are legally paid differently to artists, writers and engineers) Also while we are here "professional sound" is a complete misnomer and myth, there is isn't one, real audiences don't care.

All very good points! I tend to conflate engineering and production as the same thing, even though they are separate processes.

On the plugins thing... I've been doing this for a short time and I've already created a few tracks that actually sound like music. I'll give my own creativity and love of music some credit... but I also have to give some credit to the amazing plugins, synths, orchestra libraries etc that I've spent (or wasted) money on. I get so much inspiration when I find a synth preset I love and immediately get ideas for a song. I'm also open to the help some of the plugins can give to form musical ideas, especially the virtual instruments like UJAM plugins. But my favorite thing is just collecting vsts and exploring experimenting with them even if I might never use one in a song. Its fun. But even with all of the help I get from my growing plugin collection, it hasn't kept me from learning to play piano and get as much music theory knowledge that I can.
