Today we're pushing my new brewery to its breaking point by brewing an 8+% Stout. A Stout is the perfect test for a new brewery. Massive grain bill, long boil, a fairly long fermentation, and rather than kegging this beer I'm planning to bottle it. Plus it's winter time as I brew this and a Stout is the perfect beer for this time of year.

That looks like an epic beer and for sure those bigger, darker beers need a bit more time to mature. When you said you had two weeks I was surprised and did wonder how you were going to achieve it. But the end beer looks and sounds epic and sounds like it was worth the wait.

I used to have an Anvil Foundry 10.5 but became dissatisfied and sold it. I replaced it with the SS Brewtech SVBS. I ordered it sight unseen the same day it was announced and had to wait several months for the official release date to get my hands on it. I like it much better than the Anvil... But then. My wife was diagnosed with cancer (recovered now) and because of the medications she is on she cannot drink alcohol any longer. The two of us could handle a 5 gallon keg in a reasonable amount of time but by myself it is too much. So I shifted gears and started making 2.5 gallon batches. And guess which maker of all-in-one units is the only one to make a model perfect for 2.5 gallon batches... Anvil Foundry. So I bought a used Anvil Foundry 6.5 and I'm pretty happy about it. PS. I think I mentioned it on another of your videos but you don't need to sparge with hot water. Eliminate that Anvil Foundry used for heating sparge water and you gain that much more space.

Glad to hear your wife is doing better! The AF 6.5 is really the perfect small batch machine and the power capabilities work so much better at that scale. I'd be curious to try the SS SVBS - looks pretty sweet!

Glad to see you making content again. Found your channel when I was brewing on a Anvil Foundry All in One... which kicked when I switched it over to 240. Replaced it with my "dream" system - a 3 vessel SS Brewtech brewery built into our basement laundry room (utility sink included).

Im still working on a BIAB system. Just starting my second year of brewing, so still trying to keep it simple and low cost. Still able to make some dang good beers though.

Been using Grainfather G40 for about 2 years now and it a great system. Only ever had one problem with it a stuck pump caused by to many hops blocking the bottom screen, so I use a hop spider when using a lot of hops.

I upgraded my classic '3 tier cooler box and kitchen stove' system this year to an electric 35l Brewzilla gen4. The best thing about the upgrade is accurate mash temp control and the ability to step mash which has really improved my beers eg. weissebier with ferulic acid rest. Other benefits are such as the false bottom is really good at trapping hops so now I've done away with the hop spider and I usually set a timer so I can 'dough in' early in the morning.

I made a smores stout a while ago and was able to get a solid marshmallow flavor with just using lactose and vanilla. Added roast barley and that gave it a toasted marshmallow flavor. It ended up tasting a lot like a smores. I was very happy with it and plan to brew it again.

These high gravity beers definitely take time. I usually age them for a year, so good call to postpone the entry. Cheers and happy brewing!

Still brewing mostly on the Anvil Foundry, Dan. I'm also doing a kettle BIAB both small batches and 5 gallon on occasion. Still love the ease of cleanup on the Anvil. Do you miss the ease of cleaning ? I know Brew tools is pretty, but, man, looks to be a day just finding all the parts😅.

I’m using a klarstien 32 ltr and have a robobrew for spare just in case both all in ones. Also have a big stainless pot that’s electric that I used to boil in when I had a 2 vessel system I use for sparge now. I’d love to upgrade to a bigger system that’s WiFi at some point. Awesome that you're sharing the live process of your new brewery build! 🙌 The checklist items is something I gotta adopt for my own apartment brewery ✅ How was the clean up for the brewday test? Anything you'd improve?

Clean up was ok but I was pushing everything into buckets and then dumping outside. Some kind of floor drain will definitely make it more convenient. That and the water situation

I love Mecca Grade malts but they are hard to find and very expensive. I treat myself to a sack once every 12-18 months. You're new digs are looking sharp but I'm not jealous at all. Since 2017, I've been using a customized Wort Hog system from High Gravity Brewing in Oklahoma. Simple and it works very, very well for me. The customer service is killer too.

Nice video! That beer sounds delicious. I'm currently using an all in one propane system that ive cobbled together. Looking to upgrade to an electric all in one pretty soon. I've had my eyes on a Brewtools system for a while. How are you enjoying your system? 🍻

do you try and dump your yeast before adding vanilla/coffee and bubbling co2? Is your Foundry 110, and how many gallons do you typically heat it in? One of my systems is a Blichmann Breweasy, which can struggle with big beers. Maybe splitting out a few gallons to sparge would be a good idea.

Yea I should show that more. I usually start dumping yeast and trub after a couple days of fermentation. The foundry is setup on 110 right now but I think I’m going to shift to another setup. I have the two kettle and single kettle BrewEasy and unfortunately I’m not really a fan compared to other systems

@wd6358 yep. It took me a bunch of brews and some extra DME for awhile. 😄 but now im at 80% plus on most brews. Not to mention i do a lot of high abv and a lot of those systems are like 15lb grain max.

@wd6358 ive got the same. Ive done 28lbs in it. Really thick mash though. Long slow sparge to wash grains really well. On those batches i do 90 min mash and near 2 hour sparge. So long brew days. But havent had any issues with conversion. Usually can get 1.120 out of it.

What was your target mash pH?

That’s a good question with a stout. I try to keep it on the high side during conversion so that when the darker grains are added it doesn’t fall too far. 5.4 is a good number

Why did you boil for 75 minutes if you just added a hop extract? Why not go with 30, heck 15 minute boil?

The whole reason I watched this video was to see if that system actually hit an 8% beer. I’m guessing the efficiency was shit?

Hahaha that’s a weird assumption of course it made an 8% beer. I adjusted the volume and efficiency in BrewFather anticipating a slightly lower efficiency due to the size of the grain bill. But yea man the thing makes beer 🍻
