There are no different styles. Real birria is made from cabrito and consome from the drippings. Quesabirria with beef is not real birria, this place is not a real birrieria. Its more like a hipster taco spot.

Mexican opinion: from the start, Mexicans never use olive oil or fake lemon to cook/prepare the tacos but the ingredients look fresh and good quality.

@@WhiteCranKTo make the tacos crispy, you only need the same fat from the birria, just separate it by putting some of the birria broth in the refrigerator and it will form a crust, a crust that you then heat and the pure natural fat from the birria comes out.

Que tal, soy de México y veo a muchos mexicanos en los comentarios quejándose o diciendo que así no debería ser. No puedo estar más en desacuerdo con mis propios paisanos, no se trata de hacer todo exactamente igual a nuestra región, incluso entre estados de nuestro mismo país las recetas cambian. Lo que hace @야미보이 Yummyboy es excelente, digno de receta mexicana auténtica y sí, usa algunos ingredientes o técnicas que normalmente no se usan acá, pero si existen y si se usan para variar sabores y experimentar, incluso hay familias con sus propias recetas secretas y no dudo ni un poco que usen alguna técnica de las que usan en este video. Aparte para finalizar el video se ve que hace la "Birriamen" (combinación de birria con ramen) la cual fue una creación en México, incluso la hace mejor, así que por favor detengan sus opiniones pasivo/agresivo y feliciten al chef !!

@@tictacterminator this is very much an asian take on mexican street tacos while most of the methods to cook the food are wrong like using a propane torch to melt tacos is odd or using olive oil. he should be using a large upside down bowl and placing that over the tacos or deep frying or putting them into a oven to finish off the cooking but most of the time even these method is not used. to finish off the taco its moved to a lower heat side of the grill to allow the cheese to melt or just to keep warm.

They really love their propane torches - just flip the tacos. No need to go medieval with it! Other than taking a few small liberties, that looks like really good birria though. Now I have to cook some up myself - it's been a year since the last time. ETA: I guess it should properly be called quesabirria.

This feels like a video of someone's idea of what Mexican Birria tacos are. It certainly reeks of the excess of Korean street food. There is some things done right, but there is also SO MUCh done wrong. No Mexican place is going to bibimbap. Where are the fresh salsa's? Where is the queso cotija or queso oaxaca? They aren't going to be using a "Mexican" blend of monterey jack and colby and cheedar cheese. Also you dip the tacos in the consume not greasy fat.. stop it. Yeah... These are Koreanized versions of birria tacos, but man... learn to do it the right way. It's better than all the grease they used.

Just a friendly criticism, you can all this birria and it may be good but don't call it Mexican food, there's so many things here that you're changing to the original birria recipe that it really takes it away from the traditional way of making birria, something that Mexicans might find irking is that you don't flip the tortilla when grilling it, but anyway congrats on the success.
