I lived in Hokkaido for many years. Japanese food, in my opinion, is if not the best in the world. I've been all over, and Japan, Italy, and Norway have my most favorite foods.

One would be surprised just how internally diverse Italy & Norway both are. In fact, since lutefisk is basically a blank slate, it can be used with anything you want & can flake really well if done right & rakfisk (somewhat like its more infamous cousin surströmming) can be used like anchovies or sardines including in fish sauce & fish paste bases even in cooking, to name a few ways to put them to good use (along with a slew of other Norwegian dishes). Italy has a whole nother world beyond pizza, pasta & red sauce based dishes, especially once you find it even has a kind of fish sauce afterborn of the ancient Roman fish sauces of garum & liquamen (like Japan's shottsuru & other seafood based sauces & pastes) as well as regional dishes such as Sardinia's extensive use of bottarga, for a few examples

Good stuff (fish eggs for anyone wondering what it is) Though I prefer sardinian sweets. Torrone is a must everytime we stock up on food to bring back home after vacation 😂

We kind of accidentally ended up trying the Macha house when we were in Kyoto. It started raining right as the sun went down and we were NOT prepared for rain. So before we got soaked, we raced into the Macha house. Had the dessert, it was really nice! But they were closing soon so we eventually had to leave and got soaked 🙃

I'm so glad I was in Japan in the 1980s when I had the opportunity to eat more traditional food. They had some Western foods and plenty of snacks, but not to this extent. The portions were smaller as well.

I spent about 2 weeks there, after about 3 days of tourist traps I just started walking around and going to just random bars and restaurants, visiting some of the old buildings and castles, went to a museum, and did sight seeing and had a better time on my first day of just wandering than I did visiting dumb tourist traps.
