I completed this class last night and loved it. I am curious about Phase 1 Icing where we make the icing to stiff or medium peak and then color (in separate bowls). Your instructions say we can do this step up to 2 days before. I'm wondering if we can do Phase 1 and put it in the refrigerator for 3-4 days before going to Phase 2.

yes, you can! but putting it in the fridge will thin the icing slightly. so you definitely don't want to thin the icing at all before storing it in the fridge. also keep in mind the icing will continue to darken over time. 3-4 days is a long time for colors to darken/develop. so if you need to start prep that far in advance I'd just make the fresh icing and store it in the fridge uncolored. then wait to color it the day/night before and leave the icing on the counter in an airtight container
